Raspberry Fool – Quick, easy, and elegant fruit dessert. Great for entertaining!
Some people know how to haggle; I am just not one of them.
Believe me I have tried again and again. No, not me. It is just one skill, that I have to hone.
But hubby, on the other hand, is the total opposite, he was born to haggle- even over 50 cents.- I tell ya.
I made him go to the farmers market to get a few produce and he comes back with a bunch of fruits and vegetables that could feed an army – dirt-cheap. I don’t know how it does it. This time, he brought home way too many raspberries and you know, they do get bad fairly quickly. So I thought it would be a good idea to make a raspberry fool.
If you have never tried a raspberry fool before or aren’t familiar with it, fools are basically fruit mixed in with whipped cream and are quite easy to make with a short list of ingredients.
I have made fools before but never with raspberry. I adapted this mango fool recipe by swapping the mango, added cream cheese, flavored it with almond extract and it worked beautifully.
Here is the deal with this dessert you can make it as healthy as you want by using Greek yogurt in place of the cream or cream cheese. You can also use already whip cream to make it even easier.
Feel free to switch the fruit with berries, papaya, peaches, pineapples or a combination of any two fruits
Raspberry Fool
Ingredients
- 1.5-2 pounds raspberries
- 2-4 tablespoons sugar
- 1 cup cream cheese or Greek yogurt
- 1 cup heavy cream
- 1 teaspoon pure almond flavor
- Lime juice and zest optional
Instructions
- Reserve about ½ cup or more of raspberry for garnish and assembling.
- Place the raspberries in a medium bowl and slightly mash with a potato smasher or back of a large spoon. Add 3 tablespoons of the sugar, lime zest and stir gently. Set aside
- Using an electric mixer fitted with the whisk attachment, combine heavy cream, the rest of the sugar, and almond zest. Blend in lime -juice and sugar to taste. Mix on medium high speed until peaks form.
- In a separate bowl whisk cream cheese until light and fluffy about 1-2 minutes. Then gently fold in the cream cheese and cream mixture. Set aside.
- To assemble, divide half the smashed raspberries among 4-6 glasses; top each with smashed raspberries, (optional) whipped cream and cheese mixture. Alternate whipped cream, puree, and raspberry according to preference. Chill until ready to serve

Would you mind if I borrowed your hubby to do some haggling for me?? Cause farmers markets here in Australia are SUPER expensive and raspberries in particular!! What a legend! And what a great problem to have, having to think of some delightful things to make with excess raspberries!
