Heat oil in large saucepan. Add onions, garlic, thyme, ginger, paprika, jalapeño. Sauté until onions are soft - about 6-7 minutes.
Add black beans, potatoes, tomatoes, bay leaf, bouillon powder, chicken, and salt. Stir for a minute.
Pour in broth, bring to a boil. Reduce heat, cover, and simmer for 25 minutes or until potatoes are tender. Soup should have a creamy consistency.
Taste and adjust seasonings and thickness according to preference. Add more broth or spices as needed.
Remove from heat. Garnish with fresh parsley or cilantro.
