Wash, peel, core, and slice apples into thin slices. Add lemon juice and vanilla extract. Toss to combine.
In a separate bowl, mix flour, sugar, cinnamon, nutmeg, allspice, and salt. Add cubed cold butter. Blend until coarse crumbs form.
Transfer half of the apple mixture to the pan. Arrange in an even layer. Top with half of the crumble mixture. Repeat the layers with the rest.
Cover with foil and bake for 35-40 minutes. Remove foil and bake for 10-15 more minutes.
