Prep 9" pie pan. Mix flour, salt, sugar. Add butter, pulse. Add yolk, knead gently. Press crust into pan. Freeze 30 mins.
Heat milk, butter, nutmeg. Mix flour, cornstarch, sugar, vanilla, almond extract, eggs. Whisk into milk mixture.
Cook filling until it bubbles. Pour into baked crust. Sprinkle with cinnamon.
