Strawberry Bread Recipe – This moist, tender quick bread has a cake-like crumb packed to the hilt with juicy chopped strawberries. It’s a real treat that works as breakfast, an afternoon snack, or even dessert. 😋
This fruity bread is one of my favorite treats because, besides tasting amazing, it’s incredibly easy to make. You don’t even need a mixer! And the ingredients are pantry staples you likely already have on hand.
It’s also a great way to use up your surplus during strawberry season. Even if you have way more than you think you can use, this bread freezes really well. You can pop it in the freezer and enjoy the taste of summer all year long! 🍓
The Best Strawberries for Strawberry Bread
The key to a good strawberry bread is to choose ripe strawberries. They should be bright red, fragrant, and slightly soft to the touch. Strawberries stop ripening once they’ve been picked, so the redder and juicier they are, the better.
Ripe, fresh, juicy strawberries will add loads of flavor and sweetness to the bread. Try to avoid frozen strawberries as they tend to add too much moisture to the batter and will alter the final product – not in a good way. 😬
Recipe Ingredients
- Flour – This foundation ingredient yields bread with just the right texture – somewhere between an actual bread and cake consistency. An added dash of salt helps enhance the bread’s flavors, and a couple of teaspoons of baking powder work as the leavening agent.
- Dairy – Butter adds tenderness and flavor, while sour cream or yogurt (your choice) helps make the cake moister and more decadent.
- Eggs – With the addition of eggs, strawberry bread is officially an enriched dough. The eggs will make the bread lighter and fluffier, which is why I said it’s somewhere between bread and cake, texture-wise.
- Sugar – Since this bread is intended to be a treat, we’re making it sweet with some added sugar.
- Vanilla Extract – A dash of this flavor enhancer will make the overall taste of the bread extra delicious.
- Strawberries – Fresh, ripe strawberries are at the heart of this recipe. Choose the best-looking strawberries you can find for ultra-indulgent strawberry bread.
How to Make Strawberry Bread
Make the Batter
- Preheat the oven to 350℉ (175°C).
- Grease a 9×5-inch loaf pan with baking or cooking spray; set aside.
- Wet Ingredients – Next, in a small bowl, whisk the eggs, granulated sugar, sour cream, and vanilla. (Photo 1)
- Dry Ingredients – Mix the flour, baking powder, and salt in another bowl. (Photo 2)
- Combine – Gradually mix wet ingredients into the bowl of dry ingredients with a spatula or mixing spoon until thoroughly combined. (Photo 3)
- Butter – Then, pour in the butter and thoroughly mix, scraping the sides of the bowl. (Photos 4 & 5)
- Strawberries – Toss the strawberries with about two tablespoons of flour in a medium bowl. (That helps prevent them from sinking.) Stir in the coated strawberries until incorporated throughout the batter. (Photos 6 & 7)
Bake the Strawberry Bread
- Bake for 55-60 minutes. A toothpick inserted in the center should come out clean. (Photo 8)
- Serve – Let the strawberry bread remain in the pan for about 10 minutes before removing. Then, turn it out onto a wire rack to cool completely.
Recipe Variations
- Use different berries. Blueberries, blackberries, raspberries, or any combination of these will work well with this recipe without messing with the texture and density.
- Make it gluten-free. Simply use the same amount of your favorite gluten-free all-purpose flour blend to make this treat for gluten-free friends and family. 👌
- Spice it up. Feel free to add a few warm spices to the batter. Sometimes, I add cinnamon and nutmeg when I want my bread to taste extra cozy.
- Fruity additions. Pineapple and bananas love pairing with strawberries. Just replace half the strawberries with diced grilled pineapple. And mashed bananas are always great with strawberries.
- Strawberry cream cheese spread. Cream one 8-ounce package of room-temperature cream cheese, then a tablespoon of sugar and a cup of strawberry puree. Mix well, and spread it on a toasted slice of strawberry bread for an incredible experience.

- Cut your strawberries into even, small pieces so they can distribute more evenly throughout the bread and prevent large pockets of moisture.
