Avocado Pomegranates Pecan Salad – light and refreshing salad loaded with avocado, pomegranates, bacon, pecans and some cheese. Slightly sweet, crunchy and all around delicious!
Who needs a boring main course when you can have this avocado, pomegranates, bacon, and pecan salad? It is a light and a refreshing contrast during this season of richer and heavier foods. May I also add it is also great for this time of the year, when everyone is trying to shred a few or more pounds? Myself included.
This slightly sweet, and crunchy salad incorporates my favorite ingredients in the kitchen- bacon avocado and pomegranates. I first tasted pomegranates for the first time when I moved to Los Angeles. Growing up in Cameroon, other than tropical fruits like mango, pineapple and papaya, I had never heard of this fruit – Now it one of the reasons why I frequent my neighbor hood farmers market. I love the fact that, it adds sweetness and crunch to this salad together with the Asian pears.
When making salads if your ingredients are not fresh or don’t taste good the finished product would not taste good, either. So keep that in mind when buying your ingredients.
You should not hesitate to take some freedom with this recipe, varying it with proportions of bacon, avocado, pomegranates, and salad to suit your taste buds. You may omit the bacon for a vegan salad.
Serve with your favorite salad dressing. I enjoy this salad with either raspberry dressing or low fat ranch dressing.
