Avocado, White Bean, Tuna Salad – With Corn and Tomato. Drizzled with Herb dressing. Hearty and Satisfying Salad.
You know what’s challenging? Making a salad that is tasty, quick, filling and healthy. And for me it always starts with avocado I always have a bunch of them hanging around. Then you have beans – Love beans! How can you not love beans? Especially Fiber rich white beans.
In my household, we eat avocados with everything I mean EVERYTHING. So when am making a late dinner for the family and I want to serve something light, like a salad, without any other adornments. I have to make it substantial for hubby to even consider it dinner, and in these cool months this salad is just a nice refreshing contrast after the season of rich and heavy foods. This refreshing salad incorporates my favorite ingredients in the kitchen- corn, avocados and white beans, together with tomatoes, tuna and drizzled with herb vinaigrette or low fat ranch dressing. I love the herb dressing but hubby likes it with ranch dressing. You decide. When making salads if your ingredients are not fresh or don’t taste good the finished product would not taste good, either. So keep that in mind when buying your ingredients. Serve on a bed of salad or use tender spinach leaves. Have 1-2 extra avocados, if you would like to serve the salad in avocados. Recipe for low fat ranch here. You may omit the tuna to make it a vegan meal

I think this would make a perfect lunch….. I would like to make a batch to last me 2 or 3 days but in my experience, the avocado turns dark over time and doesn’t look so appetizing…. any tips to keep the avocado looking fresh? Thank you

Hi Nullacia, Place avocado in an airtight container with a piece of cut up onion. Cover with lid and refrigerate. Hope this helps

Imma. I swear, you are the ONLY person in the world that can make me want to make a recipe with canned tuna and beans in it. I overdid canned tuna when I was dieting and I can’t look at it to this day. But this….I could definitely try this. Because I know YOU know great food!!

Thanks Cheryl. I do take them during the day, you should see me some days sitting, wishing, hoping and praying for the sun, to just do what it does best- Shine, for 10 minutes only. I don’t ask too much.. I think. And then it does! and I start shooting.. by the time you know , it is gone AGAIN! Counting the weeks till spring!

This has been added to my dinner meal rotation , trying to shred a few pounds ( which is so darn hard with all the cooking I have been doing lately). P.S Go easy on the avocados! Although they are nutritious they still pack a lot of calories!
