Butter and salt are enough to give more life to our humble corn but imagine adding a garlicky and spicy twist to it. Ah huh! You bet it will be the best-tasting roasted corn ever.
And yes, it’s as simple as adding minced garlic and Creole Seasoning to the butter, yet the result will genuinely surprise you. 😉
Recipe Ingredients
Oh, you’ll love our recipe here because you won’t need a particular cooking skill to make it. It’s effortless to prepare with only five basic pantry ingredients. Yay!
- Corn – They are naturally sweet and tasty, so you won’t need to add much flavor to make them more delectable. Like carrots, corn is also an excellent source of lutein, carotenoids, and zeaxanthin, essential to our eyes.
- Garlic Butter – Although plain butter is enough to add flavor to our roasted corn, adding garlic and herbs to the butter will make our grilled corn more phenomenal. My homemade garlic butter recipe is mouthwateringly good.
- Creole Seasoning – This unique blend of herbs and spices will instantly elevate any dish. And it’s the secret to this fantastic grilled corn on the cob recipe. Customize it according to your palate with my homemade Creole Seasoning.
How to Grill Corn on the Cob
Prep the Corn
- Remove Husk and Silk – Shuck and remove as much silk as you can from the corn.
- Soak the Corn – Pour the water into a large pot or bowl. Then put corn into the pot and soak for at least 30 minutes or overnight. This helps keep the corn moist as it cooks.
- Make the Garlic Butter
- Preheat grill to high heat.
- Combine – In a small bowl, combine garlic butter and
Creole seasoning. Set aside.
Grill the Corn
- Grill – Place the corn directly on the preheated grill, occasionally turning, until it’s charred and cooked through, about 15-20 minutes total.
- Brush the Corn with Butter Mixture – Remove and serve slightly cooled, and brush with additional garlic butter. Now is an excellent time to add optional toppings if desired.
Recipe Variations
- Spicy – Ramp up the heat by adding hot sauce, pepper flakes, or cayenne pepper to our garlic butter.
- Sweet – Opt for a kid-friendly version by keeping it simple with only butter and a tad of sugar. Yum!
- Cheesy – This one is meant for cheese-lovers. Yaaay! You can’t go wrong with parmesan, cheddar, or Mexican queso fresco. Oh yes!
- More Flavor Twists – Aside from Creole Seasoning, you may also try it with taco seasoning, Italian seasoning, or seasoned salt. 😉

- Boiling the corn before grilling ensures it cooks well and shortens the grilling time.
- Don’t overcook because overcooking will dry out your corn and result in hard, rubbery corn kernels. And remember to turn the corn several times until all sides are evenly cooked.
- Another method is wrapping the corn with foil before grilling for an easier clean-up. However, with foil, you won’t get those beautiful char marks.
Make-Ahead Instructions
Of course, grilled corn is best enjoyed fresh from the grill for that perfect plump and crisp. But to save you time, you may soak the corn the night before (but not more than 8 hours) to ensure moist corn, especially if you choose to grill corn with the husks still intact.
You can also make your garlic butter a couple of days ahead and keep it in the fridge for up to 3 weeks. So you can also enjoy it with your bread. Talk about maximizing its uses. 😉
Serving and Storage Instructions
Aside from garlic butter, you’ll love our grilled corn on the cob with sour cream or mayonnaise and cheese sprinkles. That’s why leftover is a rare occurrence in our home. But in case you’re wondering what to do with your leftover corn, here’s how to store them.
Wrap leftover cooked corn individually in foil and store it in an air-tight container or freezer-safe resealable bag. They will last in the fridge for four days and four months in the freezer. You can also cut the corn off the cob and freeze it for later.
When ready to serve, simply thaw the frozen corn in the fridge overnight. Reheat on a grill for about 10-15 minutes rotating several times until heated. If using a microwave, cover the corn with a damp towel to prevent the corn from making a mess and avoid drying out. (I’m sorry to burst your bubble; it won’t pop like popcorn. ;P)
