Are Honey-Glazed Baby Carrots Healthy?
You may be wondering just how healthy baby carrots are if they are roasted and covered in a honey glaze. Well, good news for you healthy eaters: this dish is super healthy!
Roasted carrots have loads of health benefits, and while their natural sweetness is bumped up a notch with a honey glaze, they don’t turn out sickly sweet.
Plus, honey is a totally natural sweetener, so you don’t have to worry about using conventional sugar here if you aren’t into that. 🙌
Recipe Ingredients
- Baby Carrots – Small carrots with leafy tops or precut baby carrots are the star of the show. These root veggies are crunchy and savory with just a hint of sweetness. You could also opt for regular-sized carrots in this recipe. Just peel them and then cut them into smaller chunks – about 1½-2 inches thick and ½ inch wide.
- Butter – Butter makes the base of a delicious glaze in this recipe with all its moist, flavorful characteristics.
- Garlic – This aromatic vegetable adds an invaluable layer of flavor to any recipe, but it takes carrots, which some people might consider boring, to new flavor heights.
- Cloves – This dried flower bud has loads of flavor and makes for a powerful aromatic spice that combines beautifully with the carrot’s flavor and slight sweetness.
- Thyme – An herb with a subtle minty/earthy flavor balances out the other ingredients here and gives basic recipes another exciting layer of flavor.
- Honey – Sweet and thick, honey is a natural sweetener with a lovely floral flavor that makes a beautiful glaze. If you don’t have any honey in the pantry, you can make this glaze with brown sugar instead, which creates a deep, rich flavor that is just as delicious.
How to Make Honey-Glazed Baby Carrots
Get Ready to Roast
- Grease the Pan – Prepare a baking pan or sheet by greasing it with butter, oil, or cooking spray and set aside.
- Preheat your oven to 400℉/205℃.
- Clean the Carrots – Scrub and wash the carrots, and set them aside.
Make the Glaze
- Heat Oil – Heat a large skillet or cast-iron pan over medium heat, then add the butter and olive oil.
- Add Seasonings – Once the butter melts, add the garlic cloves and thyme, and cook until fragrant.
- Pour in the Honey – Stir in the honey until it fully incorporates with the other ingredients.
- Coat the Carrots – Add the carrots and mix with the sauce until the glaze completely covers every carrot. 😋
Roast the Carrots
- Line the Baking Pan – Transfer the carrots to the greased baking pan or sheet in a single layer.
- Add the Honey Sauce – Drizzle the sauce over the carrots.
- Roast the carrots in the oven for 18-20 minutes or until they’re fork-tender.
- Salt to Taste – Add salt and pepper to taste and cook for about one more minute.
- Finishing Touch – Transfer the carrots to a serving platter, being sure to include any remaining sauce in the roasting pan. (It’s all about that glaze, baby!)
- Serve – Garnish with chopped parsley and enjoy.
Tips and Tricks
- You may need to adjust the cooking time in this recipe, depending on the thickness of your carrots. Simply stick a fork in the carrots to see if they are tender. The cooking time may vary a bit, but they’re ready to serve once they are fork-tender.
- Have fun with your garnish! My family loves parsley for this dish, but you could use chives, cilantro, or any other herb you love to garnish carrots with.
- Don’t try to whip up the glaze on high heat. Butter and honey can burn quickly, so keep the heat on medium while cooking the glaze stovetop.
Make-Ahead Instructions
Making honey-glazed baby carrots ahead of time is easy. Follow the recipe instructions but pull the carrots out of the oven just a minute or two before you usually would, just before they are perfectly tender to retain some of that delicious crunch when you reheat them the next day. 🤤
Serving and Storage
Serve honey-glazed baby carrots fresh out of the oven and with your favorite green garnish. These carrots taste the best piping hot.
Keep any leftover honey-glazed carrots in an airtight container in the fridge. They’ll stay good for about 3-5 days.
To reheat honey-glazed baby carrots, you can place them in the microwave for a minute or two, or you can reheat them in your oven. Set the oven to 350℉/177℃ and bake for 5-10 minutes or until the carrots heat through.
FAQs
Precut baby carrots come already peeled, so there’s no need if you buy true baby carrots. If you get smaller, leafy-topped carrots or are using regular-size carrots for this recipe; peeling is a matter of personal taste. Many people prefer to peel their carrots, but as long as you scrub and wash them thoroughly, it’s perfectly safe to eat them with the skin on.
You don’t have to store raw carrots in the fridge, but they’ll definitely last longer there. That said, you should always store cooked carrots in the refrigerator.
Carrots can go rubbery or floppy if they start drying out. They should be safe to eat as long as they don’t have any mold or dark, smelly spots. Of course, the fresher the carrots, the better the flavor.

I adore this recipe because honey-glazed baby carrots go with just about any main dish! I love to serve mine alongside other roast dishes, such as roast beef or stuffed roast pork loin.
They also taste great paired with other roasted side dishes too. Try them with rosemary roasted potatoes, oven-roasted corn on the cob, or spicy roast garlic broccoli for some amazing flavor pairings. 💥

I made these to got with dinner last night. Easy to follow recipe! They were DELICIOUS! NO leftovers! I didn’t have orange juice, so I squeezed an orange until I had enough. Worked for me! Thank you !!!!!!

When does the other 1/2 of the orange juice go in?

I made these tonight and served them with roast pork. An excellent new twist for carrots. I would recommend to others that if you are prone to heart burn you may want to cut the cayenne down to 1/4 tsp on your first batch and then go from there in the future. They are not overly hot at all, but there is just enough heat that it will sneak up on you in this recipe. I liked it!

Hi Don,
You use all of the requirement amount of orange juice (1/2 cup).
