Honey Roast Carrots – incredibly easy, quick, delicious and nutritious whole carrots bathed in honey, garlic and seasonings. A fuss-free side dish that is also elegant enough to serve for company!
When it comes to vegetables, I’m here to report that carrots are the only ones that my son would eat whether raw, roasted or what without a single word of defiance. It’s not that he doesn’t eat other types of veggies, but the subtle sweetness and crunchiness of carrots make it so easy for my son to snack on it.
That is why I always keep a bag of it in my pantry. Aside from that, they make the quickest and handy side dish that you could throw in any time. Not convinced yet? Let me show you why you should have this far more often in your menu.
Benefits of Eating Carrots
Popular with its orange color, Carrots are root vegetables that were known to exist in Afghanistan since 900 AD. They also come in other colors like purple, red, yellow and white. It has sugar in it which gives them that slightly sweet flavor, but depending on its color, it could also taste earthy and bitter.
As we all know, carrots are best-known to be rich in beta-carotene which helps keep our eyes healthy. Moreover, it also has anti-oxidants that are linked to cancer prevention and boost a healthy heart. It’s packed with essential vitamins and minerals such as vitamins B6, K, potassium and phosphorous, among others. And if you’re into a rigorous skin regimen, might as well be friends with carrots as it can help you achieve that radiant glow!
Honey Glazed Carrots Ingredients
Here at home, we’re a big carrot muncher. Yep! We loooove raw carrots as much as we love plantains (okay… probably not as much as I love plantains 😅). Check out my collection of plantain recipes HERE.
But our go-to carrot dish would be this fuss-free side dish Honey Glazed Carrots recipe. With just a handful of ingredients in under 20 minutes, you’ll have a delicious and nutrient-dense goodness veggie right on your dining table.
You’ll just need the following below to make something as good and wholesome as this.
- baby carrots with stems or small carrots
- butter
- olive oil
- garlic cloves
- fresh thyme
- honey
- salt and pepper
- cooking spray
- chopped parsley for garnishing
Recipe Variation
This roasted carrot recipe is already a winner as is, but for those who want to jazz it up, you can customize these carrots.
- Instead of honey, you may swap it with maple syrup or simply brown sugar.
- Love everything bacon? Wrap each carrot with 1/2 slice of bacon before popping it in the oven. (Like what I did with my Bacon Wrapped Plantain.)
- Add a teaspoon or two of orange juice for a citrusy pop that will tease your tastebuds.
- Feel free to add other vegetables into the mix such as sweet potatoes, red onions, bell peppers or butternut squash.
- For added texture, you can also top these glazed carrots with sliced almonds or chopped cashews. Yum!

How To Make Honey Glazed Carrots
Preheat oven to 400°F (204°C). Prepare a baking pan or sheet by greasing with butter, oil or cooking oil spray; set aside. If using baby carrots with leafy tops, cut off leaf tops, scrub and wash or just cut carrots in large chunks, depending on the size of carrots. Heat up a large skillet or cast iron over medium heat then add butter and olive oil. Once the butter has melted, add garlic cloves, thyme and cook for about a minute or until fragrant. Stir in honey and until the honey has been fully incorporated with the other ingredients. Add the carrots.
And mix with sauce so every inch of carrot is covered in sauce. Season with salt and pepper to taste. Let in cook for about a minute.
Transfer carrots to prepared pan or baking sheet, place in a single layer. Drizzle sauce over the carrots. Place carrots in the oven and roast for about 18- 20 minutes, or until carrots are fork-tender. Transfer carrots to serving platter and pour any remaining sauce from the roasting pan. Garnish with parsley.
