Orange Cake – A tender, buttery melt in your mouth cake , add this to your cake repertoire – the taste is irresistible.
So I made Homemade Orange Curd.
Now, I have to put it to good use before I finish the entire thang. For the life of me, I cannot stay away from the refrigerator. I am coming up with every excuse to make a trip to the kitchen.
Maybe I should just grab the jar, a spoon and eat away. That doesn’t sound like I plan to me- right? This simple elegant and bright orange cake would brighten up your weekend. Be sure to have family and friends over when you make it .
There is no better time than now to try this cake, because tis the season for oranges. Paired with orange curd and it is officially orange taste bud overload. Not that anyone eating the cake would mind.
This orange cake is light, yet moist and it is delightful. The fresh orange zest and juice create a cake that is full of orange and almond flavor. You may omit the almond flavor, however, I think orange pairs well with almond.
When using oranges skin, try to buy organic or wash the skin thoroughly to get rid of any pesticides.
Enjoy it with this 5 minute microwave orange curd

I really want to try this. It sounds and looks fantastic. I don’t have a 10 inch pan.
Can you suggest something else that might work? Thank you.
ImmaculateBites says
A bundt pan or 9×13 baking dish would work.

Thanks for the quick answer.

Hi Imma! Your orange cake sounds delectable. Since I am a vegan, I will be substituting the butter with vegan “butter” and the 5 eggs with 5 ground flax seed “eggs” which of course will alter the taste. I will let you know how it turns out! This will be my first attempt at making a vegan cake like this one.
ImmaculateBites says
Hi Marti! I would be patiently waiting for your feedback! Curious to know too! Thanks !

I love trying out new recipes, especially if they include citrus! I would amend your instructions for anyone living in low altitude and with oven that runs hot, 325F seemed to be cooking so fast that midway I decreased it to 275F. The edges were turning dark brown too fast. I also should have used a true 10in pan as you instructed because it does “poof” up. It smells heavenly and can’t wait to serve with curd overtop. (I have some leftover lemon but not orange so we’ll see how it goes. Next attempt I will know tweeks and errors) Thank you! Will look forward to trying more of your recipes!

I find that I do think really care for the taste of the almond flavor sold in stores. Is there a way to incorporate real almonds into the recipe?
ImmaculateBites says
Yes, check out this post http://africanbites.com/?p=12130

Hello Immaculate! Very nice blog. I don’t know why it took me so long to find you, but I’m glad I did. I enjoy cooking as well and have long had this dream of writing a cookbook of Cameroon cuisine complete with nutrition information. It’s still on my bucket list…lol. I’ve tried your orange cake and curd and also the jamaican meat pies. Both turned out well. I’m looking forward to the achu soup, nkwi and bah and njamsu recipes. You know you are our Ngwagu lol. Happy new year!
Africanbites says
