What can I say about these scotch eggs? The first time I made these was in my Home economics class, without a recipe, and to cut a long story short- it was a tasty mess! It fell apart during the cooking process, the upside? I got to make a delicious sandwich out of it and still do! It makes for an amazing sandwich with hot sauce and a salad on the side.
These appetizing scotch eggs originated in London –created by Fortnum and Masons. They were meant to be portable snacks, for long journeys. Due to its popularity they have quickly become a staple in pubs and restaurant menus. In fact, it was the first thing I tried while visiting London- I do prefer the homemade version though.
I get to play around with it and make it sometimes with less guilt- Like Baking and using not so fatty meat.
At first glance you would think are complicated – wrong! They are ridiculously easy to make. All you need is sausage meat, boiled eggs, and seasoned breadcrumbs. For added flavor, include minced garlic and parsley. Omit these spices or switch out the spices for more to suit your taste buds.
I always like to offer up more options, so here you have the baked scotch eggs and Fried – both taste great!
You may also serve with a good dipping sauce and or pickles

How To Make Baked or Fried Scotch Eggs
Gather all the ingredients necessary before proceeding -Preheat the oven to 350°. Line a baking tray with parchment paper
Remove casings form sausage and place in a bowl. Add, garlic, cayenne pepper,thyme, granulated onions, white pepper and salt. Mix thoroughly.
Lightly roll the boiled eggs in flour , then shake off excess flour.
Divide into equal portions and then shape into a thin round, flat enough to fit around the egg.
Gently wrap the sausage meat around the egg as evenly as possible making sure there are no cracks or opening.
After rolling eggs dip in egg mixture egg.
Heavily coat in breadcrumbs mixture .
You are set to Fry or bake at this point.

I did a trial run and they turned out great. I used large eggs by accident. And didn’t roll the boiled egg in the flour but I put the egg rolled in sausage in the flour. What does rolling the boiled in flour do? I didn’t read thoroughly so I made those errors. But they were tasty and filling. I had mine with mustard

My scotch eggs keep opening up in the oven. The meat seems to shrink so the egg is exposed. Do you have any experience with this? I was researching and couldn’t find much, but I saw one comment about the egg possibly being boiled for too long causing lack of moisture.
Do you know anything about this? How long do you typically boil your eggs for for scotch eggs?

Try reducing the temperate and bake them longer. Also remove your eggs from the stove when it’s medium cooked . Moisture helps prevent the eggs from splitting.

Hi, I didn’t realise it could still work with ground beef and Turkey. I tried to make scotch eggs with sausage meat a few weeks ago. I baked them. They came out okay but there was a lot of oil at the end. Do you use lean sausage meat? Is there even such a thing?

You could use chicken sausage. They do have healthier alternatives to sausage, I usually check the nutrition label or ask around at the meat department.
Fyi cut down on the the cook time, if using lean meat . It dries out fairly quickly

These looks great! I had never heard of Scottish Eggs before until I saw Gordon Ramsay made them when I was watching one of his cooking series Course for Channel 4 in UK on YouTube called the Ultimate Cooking Course last year. A really great course In my opinion. But I thought at time seeing him make them what a wacky idea for combining sausage with Eggs.
I’m guessing it’s more than likely as well that you can sandwich the egg inside of some mashed potatoes, mold it and either bake or fry the same way somewhat. That would become a whole different kind of egg recipe idea. Scottish Eggs with Potatoes instead of Sausage or an alternative. But then it wouldn’t quite be Scottish Eggs I think.

2 cups flour
3 Tablespoons sugar
1 teaspoon alt
1 teaspoon baking powder
Vanilla extract(optional)
Method; Mix ingredients, heat oil to about 350, gently place batter, cover, and go to sleep.
