Flake canned salmon into large bowl, mix with eggs, onion, garlic, breadcrumbs, seasonings & hot sauce. Drain liquid into measuring cup.
Lightly dip the croquettes into the extra egg mixture until it is completely coated. Then roll them in breadcrumbs. Set aside.
Heat ½ cup oil in non-stick pan over medium-high heat until 350℉/177℃. Fry croquettes for 2 mins/side until golden. Fry in batches to avoid sogginess.
