Remove husk, cut kernels from cob with sharp knife. Collect kernels and juices in large bowl. Scrape any residual corn from cob with knife. Repeat with remaining corn.
There will be some bacon drippings left in the pan. Reserve not more than 1-2 tablespoons. Add butter to the pan followed by onions and garlic.
