Fresh corn, green onions, smoked paprika, garlic, milk, cheese and cilantro are some of the ingredients you'll need to make these delicious sweet corn fritters.
Remove the husk from the corn and using a sharp knife, cut the kernels from the cob from top to bottom. You can microwave or boil the corn before removing the husk.
In a medium bowl, mix together all the dry ingredients: corn kernels, cornmeal, green onion, bell pepper, jalapeno, flour, minced garlic, cilantro, paprika, salt and pepper.
Oil heated in skillet, add ¼-1/3 cup batter, press flat, fry until golden, 3-4 min per side (thickness dependent). Batches as needed.
Drain the fritters on paper towels before serving. Best served warm with cilantro dressing. Enjoy your delicious sweet corn fritters!
